Exotic Fruit Salad

Though during the year I try to keep my salads to the healthier side, for Tu B'shvat I treat my family and guests, to something a little more exotic. When I tasted this salad by my cousin Leah’les house some time ago, I knew it was one that I’d want to share. Whether you plate it and serve it to start off the meal, or serve it with the main, it’s sure to be a big hit.
Serving 6-8
1 16 ounce bag shredded lettuce
1/2 avocado, diced
1-2 handfuls of exotic dry fruit mix
1 handful of glazed pecans or almonds
pomegranate seeds
Dressing
1/2 C mayonnaise
1/4 C honey
1 Tbsp mustard
2 tsp vinegar
1 garlic cube
1-2 Tbsp water
Directions:
Place lettuce in a bowl. Arrange the other salad ingredients in neat rows on the top of the lettuce. Combine dressing in a separate bowl and drizzle on top.
